Yummy Yummy Collards

Would you believe that I've lived down South for almost 25 years and I never made collard greens?!

I had them a couple times when I first moved here and didn't like them, so I swore them off forever.

I've been trying to incorporate more greens into our diets, but everyone is so darned picky. My daughter and I will eat spinach, but hubby and the boys won't. No one really cares for turnip greens and I'm still not really sure what poke salat is, so I decided to give collards another chance.

Since I never cooked them before, off to the net I went to try and figure it out. I found this great recipe at The Kitchn for inspiration. You can also check out my pin.

I didn't have ham hocks, but I bought some ham pieces and that seemed to work pretty well. Boiling them was probably pretty pointless since there wasn't much to flavor the water, so I might skip that next time if I only have pieces again. Also, I'm going to try sauteing them in olive oil to be a little healthier. Other than that I was pretty faithful to the recipe and they turned out amazing!! Everyone loved them which was a total surprise.

The picture doesn't do them justice, but I'm really proud of myself, especially since I didn't mess them up.
